Pumpkin Cake With Cream Cheese Frosting

Pumpkin Cake Recipe
Every Thanksgiving, and even every Christmas (yes it’s requested that much) my mom or grandmother makes this cake! In fact if the cake wasn’t sitting on the desert table every Thanksgiving and Christmas, there would probably be a family uprising;)
It’s so good that my daughter even requested it to be used in her ballet birthday cake this year! And I use it in the halloween cake I make for our annual halloween party as well:)
So, you get the idea;) AMAZING cake! In fact, I’m totally wishing I had the cake right now! Literally I’m almost drooling I want it so badly! I’m going to need to make this soon, very soon!
Pumpkin Cake

Ingredients
- 3 Cups Sugar
- 1 Cup Coconut Oil
- 1/3 Cup Water
- 4 Eggs
- 2 Cups Canned Pumpkin
- 3 1/2 Cups Flour
- 2 tsp. Baking Soda (heaping)
- 1 tsp. Salt
- 1 tsp. Cinnamon
- 1 tsp. Nutmeg
Instructions

Mix sugar, oil, water, eggs & pumpkin in order given; mix in sifted dry ingredients. Pour into tube cake pan. Bake for 1 hr. 15 minutes at 350 degrees F.

Cream Cheese Frosting
This cream cheese frosting completes the pumpkin cake! It just wouldn't be the same without it:) It's so creamy and sweet! Best cream cheese frosting ever!
Ingredients
- 8 oz. Cream Cheese
- 1/2 stick Butter
- 1 tsp. Vanilla
- 2 tsp. Butter Flavoring (optional)
- 1 Box Powdered Sugar (4 1/2 cups sifted)
Instructions

Let cream cheese and butter soften at room temperature. Then mix well until smooth. Add remaining ingredients. Mix until smooth. Frost cooled cake!
